These oil-free, gluten-free no bake cookie bites, made of creamy peanut butter, heart-healthy oats, and rich baking cocoa, come together in just 5 minutes! This perfect, easy snack to satisfy your sweet tooth with a healthier option!

Ingredients:

  • 1/4 cup peanut butter, creamy
  • 3 Tbsp pure maple syrup
  • 1 Tbsp plant-based milk 
  • 1 tsp vanilla extract
  • 1 cup old fashioned oats (certified GF if necessary)
  • 2 Tbsp baking cocoa or cocoa powder
  • kosher salt, to taste

Instructions:

  1. In a small mixing bowl, whisk together the peanut butter, maple syrup, plant-based milk, and vanilla.
  2. Add in the oats and stir to thoroughly combine.
  3. Add in the cocoa powder and stir to combine.
  4. Slowly add salt to taste, stirring to combine.
  5. Using your hands, roll roughly 1 Tbsp of batter into a ball.  Continue until all of the batter has been formed into cookie bites.
  6. Serve and enjoy, or store in the fridge in an airtight container for up to 5 days.

About the Recipe:

NYC’s Covid shutdown has NOT been good news for my snacking habits. We’ve been so bored, it’s extra tempting to throw on a mask and run to the bodega late at night to get chips, Oreos, or whatever else we’re craving. It’s weird not needing to be up at any certain time or go to bed at a certain time, have the days blend into one another…and it’s creating the perfect setting for late night boredom eating.

You may be thinking…okay, easy solution: go to bed earlier! And I agree, that would be an easy solution. Except my very stubborn anxiety keeps me up until 1:00 or 2:00am, which makes it harder to wake up at a decent time, which makes it harder to fall asleep earlier, and the cycle continues.

So, if I’m going to be up late and I’m going to eat out of boredom or get a late night sweet-tooth, I would rather eat something that I’ve made at home (with less sodium, less sugar, no refined flours, and no oil) than something sold in a plastic bag at the corner bodega. Hence the creation of this recipe!

These are not a low-calorie treat. Because of the peanut butter, they’re calorie-dense. When I make these for just Dan and I…which is always… I make a half batch (so we aren’t tempted to eat the whole thing). However, because these are more calorically-dense, they make a great snack for growing children and athletes!

RECIPE NOTES:

This recipe is so simple, I don’t have any recipe notes! Just mix everything together in a bowl, add salt to taste, and form the batter into bite-sized cookies!

If you’re currently having snack attacks thanks to all this “no work, no play” stuff, all I can say is…here, have a cookie. Someday we’ll have a proper bedtime again. For now, we’re just getting by the best we can.
