Sweet Potato Chai Smoothie

Start your morning off right with this super filling sweet potato smoothie. Fiber-rich sweet potatoes are combined with protein-packed silken tofu, creamy dates, and warming cinnamon, nutmeg, and chai tea. Enjoy this nutritious, vegan, gluten-free, oil-free, AND added sugar-free smoothie as summer turns to fall and the pumpkin latte cravings begin to strike.

Ingredients:

  • 1 medium sweet potato, steamed, skin removed, and chilled in freezer
  • 4 oz silken tofu (¼ of a typical tofu package)
  • 4 dates, pitted (for a sweeter option: 2 pitted dates and 1 Tbsp 100% pure maple syrup)
  • 1 ½ C plain, unsweetened soy milk
  • 1 tsp pure vanilla extract
  • 1 chai tea bag (just the contents- not the bag)
  • ⅛ tsp nutmeg
  • ⅛ tsp cinnamon
  • 1 cup ice (or more for a thinner viscosity)

Instructions:

  1. Poke holes in your sweet potato and steam it in the microwave or instant pot (I used the instant pot on “steam” setting with 1 cup water for 12 minutes).
  2. Use a butter knife to pierce the potato at its thickest point. The knife should easily slide all the way through. If it doesn’t, continue to steam.
  3. Allow the potato to cool until it is safe to handle. Scoop out the insides and discard or compost the skin.
  4. Cut the potato into smaller pieces (about the size of an ice cube). Place on a plate in the freezer for roughly 1 hour. You may skip this step, but you will have to add much more ice, resulting in a runny smoothie with less flavor.
  5. Once the sweet potato pieces have frozen, place in a high-speed blender with the remaining ingredients. Blend until smooth.
  6. Add more ice if the viscosity is too thick. Blend again.
  7. If you’re feeling fancy, garnish with vegan whipped cream, a sprinkle of nutmeg and cinnamon. Otherwise, pour in a glass and enjoy!

Pumpkin gets all the love during the fall.  What about the similarly tasting, dirt-loving, easier-to-prepare sweet potato?  Yes, pumpkins are in season right now. But let’s face it: they don’t taste that great on their own.  Have you ever tasted plain, pureed pumpkin from a can? It’s straight up BAD. Sweet potatoes are higher in natural sugars, so they don’t need as much “doctoring up”.  

RECIPE NOTES:

The instructions for this simple smoothie recipe are pretty extra.  I know. But there are TWO THINGS I really wanted to impress upon you, my smoothie-curious friend.  


1. Make sure to steam the sweet potato until it is soft in the middle.  Sweet potatoes are sneaky like that. You can poke them with a fork and it slides right through.  You excitedly pull them out of your appliance, cut them open, and see that the middle is still hard as a...tennis ball.  So make sure you slide some sort of pokey object allllll the way through the thickest part to test it.   


2. Chill that puppy!  It’s annoying to have to wait for something to cool but you will not enjoy the experience of drinking this thick, rich smoothie when it’s merely lukewarm.  As stated in the ingredients, you can compensate for the temperature with more ice, but it will thin the smoothie and change the taste. If you go that route, taste and add more dates, chai, and cinnamon and nutmeg to your preference.  Otherwise, pop those chunks in the freezer, get ready for work, take the dog on a nice long walk, and your sweet potato should be sufficiently cold. Note: we aren’t looking for frozen solid. Just nice and cold.


I thought this recipe was the perfect amount of “sweet” for a smoothie.  You don’t want to introduce something super sweet to your palate first thing in the morning anyway, right?  If I start the day with a pastry (which is rare nowadays), I want sweets ALL DAY. This has a mellow sweetness. If you taste it and don’t agree, add some maple syrup to taste. A dash of salt will also help to bring out the natural sweetness.

When I made this smoothie, I thought it would taste similar to pumpkin pie, but still unique.  When my husband tried it, he exclaimed “OMG, IT’S LIKE PUMPKIN PIE IN A CUP!”


So, I guess if you like pumpkin pie, you will probably like this smoothie.  If you don’t, it may not be your cup of tea (pun somewhat intended).
